Tsukiji

This is the largest wholesale fish market in the world. The market is located in Tsujiki, a giant hall on a claimed land, south of Tokyo. Only the best quality is sold here early each morning.

Trucks arrive in the middle of the night to unload more then 2’800 tons of fish. Workers in uniform mark the frozen tuna with a blood-red color pen. Some are wheeling wooden carts with fish on them, while others are screaming out numbers in all directions which no one seems to be listening to.

Meanwhile the buyers are waiting for the opening of the fish auction at around 5am.

Then, razor-blade sharp long swords start cutting the giant tuna.

It is a hectic and smelly atmosphere and the first sushi and sashimi are already in the restaurants kitchens by 7am.
